Different from our Centre Cut Marrow — the knuckle is a joint bone with high connective tissue and collagen content. Perfect for making broth that sets like jelly when chilled — a sign of deep gelatin extraction.

How to cook:
🍲 Slow Cooker Broth (Recommended)
Blanch bones first (boil 5 mins, discard water). Then slow cook 8–12 hours with ginger, onion, and a splash of apple cider vinegar to draw out the minerals. Strain and serve or store.
🥣 Baby & Toddler Soup Base
Use the finished broth as a base for baby porridge, soft noodle soup, or plain sipping broth. No seasoning needed — naturally rich and mild.
🍜 Everyday Family Stock
Makes 3–4 litres of rich stock per knuckle. Freeze in portions for weekly use.

💡 Pro tip: A well-made knuckle broth should gel/jiggle when refrigerated — that's the collagen. The thicker the gel, the richer the batch.
